“Handcraft is not sentimentality. It’s the only path to flavor clarity.” – Kathy Jiang, founder of Linglong

At Linglong, every soup dumpling is treated like a jewel—delicately pleated, crystal-clear, unmistakably handmade. In Chinese, linglong means “exquisitely crafted, translucent, and refined.” For Kathy Jiang, that definition is not a flourish but a discipline. Each dumpling is hand-pleated, with each fold reflecting patience, and every bite embodies a careful balance of texture, broth, and filling.

Raised in Shanghai, Kathy grew up on soup dumplings. They were never just food—they were identity, memory, and devotion. After years in the restaurant industry, she envisioned a brand that would be her own. Not a direct replication of what already existed, but a reimagining: Linglong would honor Shanghainese heritage while adapting it for a new generation—youthful, colorful, playful, yet grounded in meticulous craft.

Flavor as Dialogue: The Familiar and the Curious

The foundation remains the “main palace” flavors—classic pork and crab roe, the timeless core of Shanghai dumplings. Yet Jiang expands that universe, allowing curiosity to sit alongside tradition. Linglong introduces chicken broth infused with fish maw for nourishment, salted-egg yolk lava for a surprise, shepherd’s purse vegetarian for a seasonal whisper, Libyan ham for a touch of the exotic, and molten cheese for indulgence and play. The familiar comforts; the unexpected encourages diners to engage with history through a lens of imagination.

Each bite serves as a dialogue: it acknowledges what is known while gently nudging you toward discovery. The flavor is layered, intricate, and deliberate—a hallmark of the care and vision that defines Linglong.

Color as Storytelling: When Seeing Becomes Wanting

At Linglong, color is not just decoration—it tells a story. Each shade is drawn from natural ingredients, tied to memory. Spinach green, beetroot red, pumpkin gold, inky black… every dumpling tells a chapter. Appetite begins with the eye, and each burst of broth completes the narrative.

Jiang’s palette reflects both tradition and creativity. Vibrancy suggests innovation, while muted tones are a nod to authenticity. By making visual storytelling a cornerstone, Linglong ensures that the act of eating becomes a multi-sensory experience—a conversation between memory, expectation, and delight.

Handcraft as Non-Negotiable

Machines can roll and replicate, but only hands can listen to dough, weigh the filling, and judge the tension of each fold. For Linglong, handcraft is not nostalgia—it’s considered the only reliable path to translucence, the way for a dumpling to be delicate and strong enough to cradle its broth.

The rigor of handcraft is a daily ritual. Each dumpling is inspected, tasted, and refined. It is labor-intensive, yes, but it ensures the soul of the cuisine remains intact. In a world increasingly driven by automation, Linglong’s insistence on human touch is both bold and essential.

A Young Ritual for Today

Linglong does not chase novelty for novelty’s sake. It translates an ancient ritual into a language that resonates with contemporary diners. Smaller portions designed for sharing, bold colors for social moments, and seasonal collaborations that extend beyond Shanghai—Linglong builds on tradition as a foundation while speaking innovation as its vocabulary.

This balance between heritage and modernity is what makes Linglong culturally relevant. The brand does not simply serve food—it shapes experience, inviting its audience into a story that blends history, imagination, and deliciousness.

Partnership as Amplifier

Linglong partnered with award-winning PR agency Jay Ma Consulting to position the brand at the intersection of food, fashion, and design. Their collaboration earned a Gold Award at the 2025 DotComm Awards for Strategic Marketing and Rebranding, gaining attention across media outlets and positioning Linglong at the forefront of cultural conversations around food, fashion, and design.

The campaign translated Linglong’s philosophy into visual storytelling, social media strategy, and experiential marketing. By amplifying the brand’s essence through thoughtful PR, Jay Ma Consulting helped ensure that the world saw what Linglong had always envisioned: that craft, curiosity, and color could redefine an iconic cuisine.
