Juan Manuel Barrientos Valencia, affectionately known as Juanma, has emerged as a revolutionary force in the culinary world, defying conventions and redefining Colombian cuisine. Born on June 16, 1983, in Colombia, Juanma discovered his passion for cooking at a young age and embarked on a journey that would make him one of the most influential chefs of his generation.

Inspired by their boundary-pushing approach, he pursued an internship at Arzak, fulfilling his dreams of immersing himself in the culinary realm. “From the beginning, I wanted to study or dedicate myself to something that would allow me to be creative without limits. The kitchen allowed me. My dream was to have a creative workshop, and I succeeded,” reflects Juanma.
In 2007, at the remarkable age of 23, Barrientos opened the first El Cielo restaurant in MedellÃn. It was here that he embarked on his mission to transform not only Colombian cuisine but also the lives of others. He embraced a socially conscious approach by employing former guerrilla fighters and ex-military members recovering from years of civil war, providing them with opportunities for personal and professional growth.
Juanma quickly gained recognition for his culinary prowess and artistic vision. He became the youngest chef to feature on Latin America’s 50 Best list for three consecutive years, and in 2016, he was honored to be included in The World’s Best Chef elite list.
Building on his success in Colombia, Juanma made a significant move in 2015 by expanding his El Cielo restaurant chain to the United States. The vibrant city of Miami, Florida, became the stage for his innovative culinary creations. In 2020, his Miami-based restaurant in the Union Market District achieved a historic milestone when it became the first Colombian establishment to be awarded a prestigious Michelin star. One of the most sentimental items on Juanma’s’ menu is “El cafetal” (The Coffee Field). Inspired by his childhood memories spent on his grandfather’s coffee farm, Juanma pays tribute to the ritual of drinking the first coffee when the mist settles on the coffee plantations. “My roots are a pride for me, and I have always materialized the remembrances and memories of my childhood in my kitchen,” shares Juanma. The coffee is strained using Japanese siphon or Chemex, simulating the traditional Colombian filtering process, bringing the essence of Colombian coffee to the diner’s table.
Beyond his culinary achievements, Juanma is a committed philanthropist dedicated to making a positive impact on society. He founded the Elcielo Foundation, which provides culinary vocational training to former soldiers and ex-guerrilla members, empowering them with the skills necessary for successful careers. The foundation also receives a portion of the restaurants’ profits, enabling it to train approximately 200 individuals each year. Juanma’s goal is to ensure that 10% of El Cielo’s workforce comes from the foundation, creating meaningful employment opportunities and emphasizing his dedication to giving back to the community.
Juanma extends his philanthropic endeavors beyond his foundation, actively participating in charitable events such as the Chefs Tribute at the Rockerfeller Center, organized by Citymeals. He supports the Bogotá Wine and Food Festival, which funds the Escuela Taller de Bogotá, an institution providing cooking and craft courses to individuals with limited resources. Collaborating with foundations like Amigos del Mar, Juanma also champions environmental causes, showcasing his commitment to creating a sustainable and socially responsible culinary landscape.
