Spero Foods, a plant-based dairy manufacturer, has partnered with Sprouts Farmers Market to introduce its latest product, the Pepita Egg, a plant-based egg alternative made from just seven simple ingredients, including pepita (pumpkin seeds). The Pepita Egg, which can be found in the refrigerated plant-based or egg section at Sprouts, is the first and only minimal ingredient plant-based egg on the market and can be used to make scrambles, omelets, quiches, and baked goods. It is a refrigerated, bottled liquid product that can be used for cooking or baking, a healthier and more sustainable alternative to traditional animal eggs.
Chicken eggs are high in cholesterol and can be problematic for those with heart, kidney, or liver disease. They can also inhibit iron absorption and are a major allergen. Additionally, chicken eggs can have a significant carbon footprint due to their growing requirements and often inhumane and crowded conditions to which many laying hens are subjected. The Pepita Egg, on the other hand, has a much lighter carbon footprint, requiring 87% less land, 88% less water, and emitting 99% less CO2 than chicken egg production. Furthermore, as a plant-based alternative, it only has seven ingredients and contains no soy, gluten, nut, sugar, gums, or processed oil. Moreover, it is keto-friendly, allergy-friendly, and cholesterol-free, making it a healthier option for individuals with dietary restrictions.
Plant-based eggs are the fastest-growing alternative category, but few options are available. Spero aims to change this with the Pepita Egg, which is both nutritious and sustainable.
